Cloud kitchen, ghost kitchen and dark kitchen are often used to mean the same thing: a kitchen that cooks only for delivery and takeaway, with no dining room. In India, most people say cloud kitchen.
In the industry, though, the words are sometimes used for slightly different set-ups. Knowing the difference helps you choose the right model and talk clearly with landlords, partners and consultants.
The short answer
| Term | How it is usually used |
|---|---|
| Cloud kitchen | A delivery-only kitchen running its own brand or brands. The most common term in India. |
| Ghost kitchen | A delivery-only kitchen, often running “virtual brands” that exist only on delivery apps. |
| Dark kitchen | Same idea; the term is more common in the UK and Europe. |
All three have no seating, depend on delivery apps or direct orders, and live or die on the menu, packaging and costing.
The main cloud kitchen models
1. Single-brand kitchen. One brand, one kitchen, one menu. Simple to run, easy to keep consistent, and the best starting point for most first-time owners.
2. Multi-brand kitchen. One kitchen runs several brands on the apps, such as a biryani brand, a rolls brand and a dessert brand. More visibility, but more stock, training and complexity.
3. Shared or rented kitchen space. You rent a ready, licensed kitchen station in a larger facility. Lower setup cost and faster start, with less control over space.
4. Restaurant plus delivery brand. An existing restaurant uses spare kitchen capacity to run a delivery-only brand. Often the lowest-risk way to test a new concept.
Cloud kitchen vs dine-in restaurant
| Cloud kitchen | Dine-in restaurant | |
|---|---|---|
| Space | Kitchen only | Kitchen plus dining room |
| Rent | Lower, back lanes or upper floors | Higher, high-footfall streets |
| Sales | Delivery apps and direct orders | Walk-ins, bookings and delivery |
| Biggest cost risk | App commissions and discounts | Rent and staff |
| Brand | Photos, packaging and reviews | The room, service and food |
Which model should you choose?

- Running a restaurant already: add a delivery brand that shares your ingredients and stations
- Experienced operator: multi-brand, once the first brand is stable and profitable
What decides success, whatever you call it
- A clear concept and a few hero dishes
- A menu costed with commission, discounts and packaging built in
- Food tested in its packaging, on real delivery runs
- Recipe cards and packing SOPs so every order is the same
- Direct orders alongside the apps
