Indian diners keep getting more curious. They travel more, watch more food content and try new places quickly. That makes 2027 a good time for owners with a clear idea, and a hard time for me-too concepts.
Here are 12 restaurant ideas we expect to do well in India in 2027, based on 3 decades in kitchens and what our clients are asking us to build. Each one comes with what it needs to work.
1. Hyper-regional Indian
Not “North Indian”, but Malvani, Kumaoni, Chettinad, Awadhi, Bohri or Naga food, cooked properly. Guests want food with a place and a story. Needs: a chef who knows the cuisine, authentic sourcing, and a menu that explains dishes simply.
2. Chef-led small plates
Sharing plates, a short changing menu and a lively bar. Works well for groups and repeat visits. Needs: strong recipes, tight food costing and a kitchen built for speed.
3. Healthy fast casual
Bowls, millets, grills and salads that are filling, tasty and fairly priced. Needs: consistent portions, fresh prep systems and fast counter service.
4. Café-bar (coffee by day, cocktails by night)
One space earning across the whole day. Needs: licences in place, a menu that changes with the hours, and staff trained for both.
5. Modern Indian street food
Chaat, vada pav, rolls and kebabs in a clean, quick format with great sauces. Needs: standard recipes and hygiene systems so quality holds at volume.
6. Single-dish specialists
A whole brand around one dish: biryani, ramen, pizza, khichdi, momos or dosa. Needs: one dish done better than anyone nearby, and a short menu around it.
7. Global comfort food
Korean, Japanese, Lebanese, Mexican and Italian comfort dishes adapted carefully for Indian tastes. Needs: R&D and food trials to get the balance right.
8. Bakery-café
Fresh bakes, coffee and all-day plates. Strong takeaway and gifting sales. Needs: a bakery chef, a good oven setup and display planning. See how to open a café in India.
9. Plant-forward menus
Vegetables as the star, not a side, for vegetarian and flexitarian guests. Needs: creative recipe development and good produce suppliers.
10. Delivery-first brands
A cloud kitchen brand built for delivery from day one, with packaging designed for the food. Needs: costing with commissions built in and food tested on real delivery runs.
11. Experience dining
Chef’s tables, tasting menus, pop-ups and supper clubs, often with limited seats. Needs: a strong chef, careful planning and pre-booking.
12. Neighbourhood family restaurants
Not every idea needs to be new. A clean, reliable, fairly priced family restaurant with a great core menu still wins in most cities. Needs: consistency, SOPs and a well-trained team.
How to choose the right idea for you
- Match the idea to your site, budget and the guests nearby
- Check who already serves that idea in your area, and how well
- Run the numbers with a simple restaurant business plan
- Test the menu with food trials before you invest in the build
