Mumbai is one of the best and toughest cities in India to open a restaurant. Diners eat out often and try new places fast. Rent is high, good staff move quickly, and a new outlet has a few weeks to win its neighbourhood.
As a Mumbai-based restaurant consultant with 3 decades in kitchens and 126 projects, this is the route we take with our clients, step by step.
1. Start with the concept and the numbers
Decide who the restaurant is for, what it serves, the average bill per person and how many covers you need a day to break even. Write it down in a short restaurant business plan before you look at sites. In Mumbai, rent decides more than anything else, so the numbers must come first.
2. Choose the site carefully
Look at footfall at the hours you will be open, not just on a weekend evening. Check the kitchen area, ceiling height, exhaust route, gas line, drainage and power load. Ask whether the building and society allow a commercial kitchen. A site that looks perfect from the front can be impossible to build behind.
3. Plan the licences early
Restaurants in Mumbai typically need an FSSAI licence, a health trade licence from the municipal corporation, a shop and establishment registration, fire NOC and GST registration. A liquor licence, if you serve alcohol, takes the longest. Start these as soon as the site is final, because delays here delay everything.
4. Build the menu before the kitchen
Curate a tight menu, develop every recipe and run food trials. Cost each dish so the price works with Mumbai rent and staff costs. Only then plan the kitchen: stations, equipment and MEP (gas, water, drainage, exhaust and power) built around what you will actually cook.
5. Choose crockery, kitchenware and vendors
Pick crockery, cutlery, glassware and linen that suit the concept and survive a busy service. Fix reliable suppliers for vegetables, meat, dairy and dry stores, with clear specifications and delivery times.
6. Hire and train the team
Mumbai has a deep pool of hospitality talent, and strong competition for it. Hire early, set clear roles, and train the team on your recipes, plating, service and hygiene in your own kitchen before opening day.
7. Set up technology and run mock services
Billing, online ordering, inventory and table management are set up and tested. Then run full mock services with friends and family to fix small issues before paying guests arrive.
8. Open, then stay close
Start with a soft opening, then the launch. The first 90 days decide whether standards hold. Track food cost weekly, read every review and keep training.
Common mistakes we see in Mumbai
- Signing a lease before checking exhaust and gas routes
- Designing the kitchen before the menu is final
- Menus too long for the kitchen size
- Pricing without proper food costing
- Opening before licences are in hand
Frequently asked questions
How long does it take to open a restaurant in Mumbai?
It depends mainly on the site and licences. With the site final and a clear plan, the setup follows the 8 steps above in order, so nothing is done twice.
Is a cloud kitchen easier to open in Mumbai?
It needs less space and lower rent, but the delivery apps are crowded. The menu, packaging and costing must be sharper.
